Avocado Caprese Salad

Dress up a traditional Caprese simply with your presentation - this is a fun way to serve it and it tastes delicious! This is all about buying the best, most "fresh-in-season" ingredients possible. It's simplicity shines bright when using the best ingredients.


Ingredients:

  • Ripe Avocado (1 makes two servings)

  • Fresh Tomatoes (freshest available - On the Vine, Kumato or Heirloom)

  • Mozzarella balls/pearls

  • Fresh Basil

  • Balsamic (use really good aged balsamic if you can - I love 18 year Fustinis)

  • Olive Oil (opt for the good stuff!)

  • Maldon Salt (or large flake Koscher Salt)

  • Pepper

  • Hot pepper flakes (optional)


Directions:


1. Make sure your avocados are soft enough to peel off the outside membrane. Separate into halves - then remove the peel - being careful not to smoosh the avocado while doing so. Then take a spoon and carefully create a larger well in the center by scooping out more flesh.


2. In a bowl - mix the mozzarella and tomatoes in some olive oil and balsamic.


3. Next drizzle a little salt, pepper, olive oil and balsamic over the avocado - then add the mozz and tomatoes. Finally shove in some pieces of basil - then add a little more of everything over the top with salt and pepper.


4. Serve!
