Banana Wafer Pudding

One of my favorite things! This recipe calls for homemade vanilla wafers - they are truly what makes this recipe great. The cookies take no time at all, and are made with basic ingredients. Give it a try, I promise! This is rich and decadent - mm mmm mm. Great for dinner parties and entertaining or just because !



Ingredients:


For pudding:

- A few bananas (depends if using trifle dish, wine glasses, etc. - 1 banana per person)

- 5.1 oz. box instant vanilla pudding

- 2 cups milk

- 8 oz. tub cool whip

- 1 tablespoon vanilla (or 1 vanilla bean)

- 14 oz can condensed milk (optional)

- Pinch Salt


For Vanilla Wafers:

- 1 stick butter (softened)

- 1 cup sugar

- 1 tablespoon vanilla

- 3/4 teaspoon baking powder

- 1 & 1/3 cups flour

- 1 egg

- 1/4 teaspoon salt


For Whipped Cream:

- 1 cup heavy cream

- 1 tablespoon sugar

- 1/4 teaspoon vanilla


Directions:


Vanilla Wafers:

1. Preheat oven to 350 degrees

2. Beat butter and sugar in a mixing bowl with an electric mixer until light and fluffy.

3. Add egg and vanilla extract and mix until combined.

4. Combine flour, baking powder, and salt in a bowl and mix. Add the dry ingredients slowly until all combined.

5. Roll dough into small circles and place onto parchment paper -- they spread a lot! Mine came out large - so try to do only a teaspoon per one.

6. Bake for 12-15 minutes until lightly browned on edges. Set aside to cool while you make the pudding. (Try to resist eating them all)


Banana Pudding:

1. Mix the pudding mix with the milk until thickened - about 2 minutes or so of whisking.

2. Add pinch of salt, vanilla, cool whip tub, and condensed milk. (if you don't have condensed milk - don't worry - it will still come out great!)

3. Set in fridge

4. Prep and cut the bananas into thin slices (you can mix into the pudding or just use to layer - its up to you)


Whipped Cream:

1. Pour heavy cream, sugar and vanilla into a bowl - whisk your heart out, or grab electric mixer and whisk until you have soft-stiff (lol) peaks. Set in fridge or freezer to keep chill.


NOW to put it all together!!

Grab your vehicle of choice -- if you have a trifle dish that works great - or I think it's fun to make individual pudding glasses for everyone. Grab a wine glass and start layering -- I lay cookie, (may need to break them up), pudding then banana - and keep doing it until you get to the top. At the top, put a big dollop of whipped cream and then garnish with a piece of banana and even crumbled cookie too. -- Either set in fridge or enjoy right away!!
