I have been using the same marinade for as long as I can remember - probably because it's so simple and easy and I almost always have the ingredients on hand. The longer they marinate the better..but shoot, I have had them marinate for only an hour and they were awesome.
Ingredients:
Kabob:
Chicken Thighs
Red, Yellow or Orange Pepper
White onion
Marinade:
1/4 cup Vegetable/Canola oil
1/3 cup honey
1/3 cup soy-sauce
5 cloves garlic
1/2 teaspoon black pepper
Salt
Directions:
1. Cut chicken thighs into equal size pieces - (not too big) then cut the vegetables into same size pieces as the chicken.
2. Put all the marinade ingredients into a bowl or ziplock - then add all the chicken and vegetables - make sure they're all coated then put them into the fridge for at least one hour - up to 8 hours.
3. When it's time to cook them - add the chicken and vegetables to skewers - then put them on the hot grill. This takes about a total of 6-10 minutes depending on your grill. Constantly flip them so they don't get overly charred. Chicken thighs are very forgiving though - that's why I prefer to use them -- so if you cook them a little too long - they will still be phenomenal and tender! If you are concerned at all - just use a meat thermometer.
