This is a go-to staple you should know how to make - just how having a
go-to Chinese takeout place, is a must have. Sometimes you just want to make something yourself - or - you run into the situation where your favorite place is closed when you are craving it most! Try this recipe - you won't be disappointed!
Ingredients:
- 1 large carrot
- 1 onion
- 1 bag snow peas - or big handful
- 1 tablespoon Sesame Oil
- 1 Egg
- 2 Scallions
- 1 large chicken breast or 4 chicken thighs
- 2 garlic cloves
- 1 teaspoon grated Ginger
- 1 teaspoon garlic powder
- Salt & Pepper
- Soy Sauce to taste
Directions:
1. Prepare all of your ingredients first - this all comes together pretty quick. Cut all of the ingredients thin -- it makes the texture and taste of the dish better. If you have a mandoline slicer with the julienne blade - use this for the carrots - it makes them perfect! If you do not - be careful - and cut them into thin julienne pieces the best you can.
2. Bring pot of water to a boil and then add your box of noodles. These are really starchy and sticky -- cook based on box directions. (Don't cook too early - they all clump together if they sit drained too long - after you drain them - add a little bit of sesame oil and soy sauce to them in a bowl to keep separated).
3. In a wok, cook the chicken first - put salt and pepper all over the chicken slices then add them into the hot wok with a little bit of oil. These cook fairly fast - let them sit momentarily in the bottom to get browned then be sure to keep mixing them around constantly until all cooked through - about 7 minutes or so. Remove the chicken and set aside.
4. Add the carrots, onions and snow peas and toss constantly until beginning to brown and soften then add the garlic powder, garlic, ginger, scallions and some salt and pepper.
5. Lower wok to medium temp. Crack the egg in the middle and scramble and stir to coat all the veggies and cook all the way through.
6. Add the chicken back in - then add the sesame oil and a few good splashes of soy sauce and mix.
7. Finally, add the noodles into the wok - add more soy sauce - adding a little as you go - and toss/mix the ingredients all together until combined. Give it a taste and add more soy sauce, salt/pepper if need be. Garnish with additional scallion.
Serve right away when it's hot - it's delicious!
