Sometimes we just want pancakes..but they can be heavy and unhealthy .. so it's nice to have a go-to healthy version to have sometimes (just sometimes). This recipe works really well -- and it's simple. Give it a go!
Ingredients:
2 teaspoons baking powder
2 eggs plus 1 additional egg white
1/2 cup unsweetened almond milk
1.5 cups oats
1 teaspoon vanilla
2 tablespoons real maple syrup (plus more for serving)
1 banana
Blueberries
Pinch Salt
Additional berries or banana for garnish
Directions:
1. Put all the ingredients into a bowl and mix until incorporated -- I add the blueberries after everything is all mixed then fold them in. You could also do this first step in a blender - this will give you a smooth batter versus having chunks of oats. It's all preference!
2. Grease a griddle on medium heat with coconut oil. These are really runny at first when you pour - so if you have a mini springform pan or a round biscuit cutter - you could grease those and put them in the pan to keep the batter in place while it cooks - but if you don't it's OK. Cook for a couple minutes on the first side -- once the baking powder activates these begin to fluff up - wait to flip them until this happens then cook for another minute or two.
3. Serve these up with some real maple syrup and additional fruit! (I like to add a little chunk of butter too) ;)
