Mafalde & Garlic Pasta

This is as simple as it gets. This is put together easily with few ingredients with BIG flavor. I like to serve alongside a salad and garlic toast :)

Mafalde Pasta


Ingredients:

- 1 lb Mafalde Pasta

- 6 mini peppers

- 1 shallot

- 4 cloves minced garlic

- 1/2 stick butter

- 1/4 cup or more fresh grated parmesan - more for garnish

- 3 tablespoon olive oil

- Parsley for garnish

- Scallion for garnish

- Garlic salt to taste

- Salt and pepper

- Hot pepper flakes to taste (I use 1/2 teaspoon)


Directions:


1. Boil super salty water.

2. While the water is boiling - rinse and slice the peppers and shallots thinly (not in chunks). Get a skillet heating up on medium-high heat with some olive oil. Once hot - add the peppers and shallot.

3. Stir the peppers and shallot around until softened and brown - about 5-6 minutes - add some cracked black pepper to them.

4. Add the pasta to the boiling water and cook until al dente.

5. Once the peppers & shallots are ready, push to side of pan and add the oil olive to get heated through - then add the minced garlic and hot pepper flakes to the olive oil - stir until fragrant.

6. Reserve 1/4 cup of pasta water.

7. Drain pasta and put back in the pot it was cooked in.

8. Into the pasta pot, toss in the butter, the garlic infused olive oil/hot pepper flakes, peppers & shallots, and stir around. Once butter is mostly melted, start adding the parmesan. Once parmesan starts melting, add garlic salt to taste and more black pepper - I always like to add a little bit of the reserved water to combine it all well.

9. Pour into serving bowl and garnish with parsley, scallions and more parmesan!
