Paprika Chicken

This chicken soaks in butter, garlic, white wine, spinach and thyme. It is so gosh-darn delicious and a fabulous go-to dinner. The chicken is so tender and the sauce is so dang flavorful !!

Paprika Chicken

Ingredients:


- 2 chicken breasts

- 2 teaspoons paprika

- 1/2 teaspoon garlic powder

- 6 tablespoons butter

- 2 tablespoons fresh thyme leaves

- 5 large garlic cloves, minced

- 1 to 11/2 cups dry white wine (chardonnay or sauvignon blanc - one that you would drink!)

- 2 cups spinach

- Salt and pepper to taste


Directions:


1. Season the chicken breasts with the paprika, garlic powder, salt and pepper. Coat them evenly on both sides.

2. Melt 1 tablespoon butter in a large skillet over medium-high heat, and add the chicken breasts in once the pan is hot.

3. Cook on the first side for three minutes (or until crisping and golden and releases from the pan), flip, and turn the heat down to medium, or slightly less. Let them cook for another few minutes.

4. After that few minutes, add the remaining butter, thyme and garlic.

5. Stir the thyme, butter and garlic around, for about 2 minutes scraping the bottom bits up as you go.

6. Add the wine - and again scrape up the bits on the bottom of the pan.

7. Let the wine simmer and cook for about 15-20 minutes. The wine will reduce, so add more if you want more sauce.

8. Finally, add the spinach, and let it fully wilt. Season with more salt and pepper.


Notes:

I like to serve this chicken and amazing sauce with a side of jasmine rice - it's so yummy! Another way I like to serve it with crispy potatoes - these just soak up the sauce and is phenomenal.
