Pavolva

Want a crispy, crunchy, smooth, chewy, decadent dessert - you NEED to try this.




Ingredients:


For the Pavlova:

- 4 egg whites

- 1 and 1/4 cups sugar

- 1 teaspoon fresh squeezed lemon juice

- 1 teaspoon vanilla extract

- 2 teaspoons cornstarch


For the whipped cream:

- 1 cup heavy whipping cream

- 1 teaspoon vanilla

- 2 teaspoons powdered sugar


For the Berry topping:

- 1 container Raspberries

- 1 container Blackberries

- 1 tablespoon sugar


Garnish:

- Piece of fresh mint


Notes: - I always make this the same time as creme brûlée because I have all the yolks handy!

- Use parchment paper for easy clean-up. I actually draw around the base of a cup with a pencil on the parchment paper, then flip it upside down so you're not eating any pencil then you can make your #meringue into perfect circles.


(By the way - your guests will be majorly impressed!!)


Directions:


Preheat oven to 300 degrees.

1. Line a baking sheet with parchment paper. Draw a circle on the parchment paper.

2. In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, about 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy.

3. Gently fold in vanilla extract, lemon juice, and cornstarch.

4. Next, spoon the mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building up the edge slightly. This should leave a slight depression in the center. This is messy - so take your time!

5. Bake for 1 hour. After the hour is up, cool them on a wire rack. (be careful not to break!!)


While cooling:

1. In a small bowl or mixer, beat the heavy cream until stiff peaks form, add the sugar and vanilla after it has been mixed on high for at least one minute; set aside in fridge.

2. Smash the berries and sugar together until liquid-y. (leaving some full berries to the side for decor). (I also have just put it all into my Nutribullet for quickness than do 1 quick strain so less seeds are in it)

3. Next the exciting part - grab a #pavlova and fill the center with the #whipped cream, and top with fruit mash and top with a couple whole #raspberries and #blackberries on top. Put a fresh piece of mint for looks and VOILA! Yummmmmmy.
