This is one of those great simple salads to bust out when cantaloupe is in season, basil is growing fresh out back and you just want something different and refreshing. The sweet and savory is just amazing and this salad just feels upscale in the most simple way.
Ingredients:
SALAD:
- Cantaloupe
- Basil
- Mozzarella Pearls
- Prosciutto
DRESSING:
- 1/3 cup White Balsamic
- 1/2 cup Extra Virgin Olive Oil
- Pinch Salt and Pepper
- 2 tablespoons dijon mustard
- 1 tablespoon honey
Directions:
Lay all the ingredients on a plate - then whisk or shake all the dressing ingredients together and lightly drizzle over the salad ! Gosh could this be easier? You will be glad you tried it though!
For extra-ness - use a melon baller to get the cantaloupe into circles.
