The 'Pepper' Sandwich

Updated: Feb 15, 2020

Here is my favorite #sandwich of ALL time. One of my absolute favorite sandwiches that exist came from one of my favorite breweries in Bellaire, MI. You GUYS - toasted #ciabatta, pepper-rined turkey, roasted red bell pepper and red onion, melted provolone cheese, and avocado !!! OMG. I am leaving out one secret that really takes this sandwich to the limits...and that my friend is the #chipotle-garlic-lime-aioli. I am not a condiment gal, never really have been, but this flavor is IN-SANE.

Read how easy it is for this all to come together...

Roasted bell pepper, ciabatta, turkey, avocado sandwich
The Pepper Sandwich

Ingredients:

For the #Aioli (the special sauce)

- 6 tablespoons mayonaise

- 1 tablespoon chopped chipotle chiles in adobo

- 2 tablespoons chopped cilantro

- 4 teaspoons fresh squeezed lime

- 2 cloves chopped garlic

- 1/2 teaspoon garlic powder

- 1 teaspoon cumin

- Fresh ground pepper and sea salt to taste

For 'The Pepper' #Sandwich

- Ciabatta Rolls (or long ciabatta baguette and can slice into smaller sandwich pieces) a

french baguette would honestly work too if you can't find ciabatta

- Pepper-rind turkey (about 1/4 lb of meat per person)

- Provolone cheese (about 2-3 slices/sandwich)

- 1 thinly sliced big red onion

- 2 red bell peppers

- 2 Avocado (depending on size - half an avocado-per/ sandwich) - make sure it's ready to be spreadable!

Notes: The aioli yields about a 1/2 cup - it's easy to double the recipe and keep in a mason jar to use as a regular condiment! The sandwich recipe yields about 4 sandwiches with the amount of avocado, red onion and bell pepper I listed. Use your best judgement based on how much bread, turkey and cheese you need depending on how many sandwiches you're making!

Time to make 'THE PEPPER':

1. Turn your oven on to 400 degrees. While the oven is heating up, make your aioli. To make the aioli it's simple...place all of the ingredients in a mason jar and SHAKE SHAKE SHAKE, shake your mason jar..dooddooodoo. Set it in fridge to get all cozy together.

2. Next, I rinse & cut the bell peppers into long strips. Put them on a sheet pan and mix with 1 tablespoon of olive oil and add salt and cracked black pepper and toss. Make sure after you stir them to coat, that they are all placed evenly on the cookie sheet to roast. Place them in the oven and roast until tender and just starting to char - about 7-10 minutes depending on your oven.

3. Continuing - I use a mandolin to get that red onion sliced super thin. A little trick of mine is after they're all sliced - I like to put them in a bowl of cold water to take out a little bit of their "bite". Set aside.

Assembly time:

1. By this time, your peppers are almost done - so get the ciabatta rolls open with their lids above them lined up on another sheet pan.

2. Coat the top and bottom both with aioli.

3. Put two pieces of cheese on the bottom, and 1 piece on the top (it's just the way it is).

4. Put the turkey on - don't be cheap - about 1/4lb each.

5. Next, grab your peppers out of the oven. Place a healthy bunch of strips across the #turkey (still layering the bottom half of the sandwich).

6. Next - grab some of the #redonion and blot on some paper towel to dry. Put those little rascals right on top of the peppers.

7. NEXT and final (GET EXCITED WE ARE ALMOST THERE) grab the #avocado and mash a heaping amount on the top bread piece on top of the aioli and single piece of cheese.

8. NOW - smoosh the top piece onto the bottom piece to make a sandwich - be fast we do NOT want to lose any of the insides in the process. Once they all have their lids on (lol) I give the top a shove downward with a spatuala to kinda smoosh them together.

9. Put them into the already hot oven of 400 degrees and let the cheese get melty, and the bread get toasty. Use your own judgment here...with my experience 4-5 minutes usually does the trick. You don't want to go too long or your bread will be hard...and you don't want to go too little because then your bread is raw and hard to tear through...you get my drift?

LONG STORY SHORT - TIME TO ENJOY THE #BEST #SANDWICH. <3 <3 Serve with chips or some homemade garlic rosemary french fries ! xoxo.
